Quaker Chewy Choc-Oat-Chip Cookies

1 cup butter softened
1 1/4 cups brown sugar packed
1/2 cup sugar
2 eggs
2 tablespoons milk
2 teaspoons vanilla extract
1 3/4 cups flour, all-purpose
1 teaspoon baking soda
1/2 teaspoon salt optional
3 cups oats rolled (raw)
12 ounces chocolate (semi-sweet) 
1 cup nuts chopped

Directions
Heat oven to 375F. Beat together margarine and sugars until creamy. Add eggs, milk and vanilla; beat well. Add combined flour, baking soda and salt; mix well. Stir in oats, chocolate pieces and nuts; mix well. Drop by rounded tablespoons onto ungreased cookie sheet. Bake 9-10 minutes for chewy cookies or 12-13 minutes for a crisp cookie. Cool 1 minute; remove to wire rack. Cool completely. Makes about 4 1/2 dozen. BARS: Press dough onto bottom of ungreased 13x9 inch baking pan. Bake 30-35 minutes or until light golden brown. Cool completely; cut into bars.
Store tightly covered. Makes 32 bars.

Here is the story. Years ago when my kids were little I made these all the time. Either cookies or in a cake pan. The other day I was looking through a recipe book from the Salt River Ward that I was in for a year and a half. I forgot I had a few recipes in there. This is one of them. I didn't want to retype it all so I found a website that had it there and copies and pasted it. I originally got the recipe off an oatmeal container. Try them they are very good.

SCALLOPED POTATOES

5 medium potatoes
2 TBS. flour
2 cups milk
2 TBS. butter or margarine
1/2 tsp. salt

Peel potatoes and slice them and put them in cold water to prevent discoloration.  Prepare a white sauce of butter, flour, salt and milk. Drain potatoes and place alternative layers of potatoes and the white sauce in a greased baking dish. Bake on 400 degrees for 1/2 hour. Cover the first 1/2 hour. Add grated cheese. Bake at 325 degrees for the second half hour.

EASY GARLIC BREAD

So super easy and a great way to use up leftover hamburger buns. Last weekend we had a barbecue and had two packages of buns left over. So I made spaghetti and made garlic bread.

I put margarine in my glass measuring cup and added garlic powder and Parmesan cheese. I put it in the microwave for ten seconds and stirred it all together then spread it over the bread.

Or spread margarine over each piece of bread then sprinkle garlic powder and Parmesan cheese.

Bake at 400 degrees for about five minutes or more if you like it crispier.

THE BEST HASHBROWNS EVER

Take leftover baked potatoes that have cooled and grate them with a cheese grater and put them in your skillet with butter or margarine. Cook until warm stirring occasionally.
I sprinkle mine with black pepper.
Serve with toast, eggs or whatever you like.

My last post shows how to make baked potatoes. I refrigerate leftovers.

HOW TO MAKE BAKED POTATOES

Rinse potatoes and poke holes with a fork then wrap in foil
Bake for 1 hour at 500 degrees

Each time I do this they turn out perfect.
Easy and good with toppings of choice.

CORN BREAD

¾ cup corn meal
1 ½ cup flour
¼ cup sugar
½ tsp. salt
3 tsp. baking powder
1 beaten egg
¾ cup milk
¼ cup shortening
Stir dry ingredients. Add egg and milk. Stir in shortening. Bake at 425 degrees for 23 minutes.

Potato Cheese Soup

Recipe by Kristi Harmon Veralrud-my new experiment

5 lbs. potatoes
2 cans Campbell's cheddar cheese soup
2 cans of milk called for to make the soup
1 cup margarine ( You can leave margarine out or use less)

~Add cans of soup, milk and margarine in medium sauce pan and stir and heat until smooth liquid.
~Peel and slice potatoes and boil until slightly tender. Not tender enough to mash. Drain water and put potatoes in casserole dish. Pour the contents of your sauce pan over the potatoes.
~Add pepper or any other seasonings you prefer.
~Bake at 400 degrees for 30 minutes.

To make a smaller dish use less potatoes and one can of soup. I have five kids and my husband can eat a lot so I use 5 lbs. of potatoes. Great for a side dish with any meat you prefer. Last night I made this for dinner and I wish I had taken a picture but I'll wait until next time. I had browned some hamburger meat and had it on the table and my kids and husband dished come on their potatoes. Last night we had a lot of lest overs.

Jello and pudding delight


Ingredients:
2 small boxes of jello or one regular box
2 small boxes of pudding or one regular box
Cool whip

This one I used cherry jello and pistachio pudding

All you need plus water, milk and a mixer
Make jello any flavor as directed on box. So easy. Boil water then add to jello in bowl. After  mixed well add cold water. Stir and set in fridge for at least four hours.
Make the pudding and pour on set jello and stick in the fridge.
Add cool whip and I used the spoon to make the textured look.
Ready to serve. Enjoy!!!
I got this recipe from my step mom-in-law, Nancy Veralrud. She said you can use any flavor jello and pudding.

Pop Corn

I like sweets and I like junk food.  Especially while watching a movie at home. I also like to eat air popped pop corn plain without butter or salt. Of course it is not as good as cooked over the stove with oil pop corn or the microwavable kind. I'll tell you how it started.....
.....After a sofball game as a kid we were invited to someones house for a dessert and drinks and everybody went. When we we served many of us were dissapointed. Our drink was water and pop corn with no flavoring. After a few bites I thought it wasn't too bad.
.....I still do that today. It is much healthier and not bad at all. It helps when at times like this when I don't have a microwave. Ours quit on us a few weeks ago. We do have two large boxes of microwave pop corn that is put on hold until we get a new one.
.....Try this-it is sooo good to me. Eat M & M's with your pop corn. My mom used to go to the movies as a girl and get a bag of pop corn for 10 cents and a bag of M & M's for a dime as well.

Homemade beans

Pinto beans are a good sourse of fiber and protein plus no fat.
Easy to make in the crockpot. Here is how I made them step by step this week.
1. 16 oz bag. Sort and checked beans to get rid of any bad ones or rocks and then rinsed.
2. Put beans in bowl and fill with water and then soak overnight.
3. Rinse beans and put in pot filled with water half way, added 1 tsp. of baking soda and boiled for five minutes. As you can see in the picture it boiled over with water only half way filled up. That's the baking soda. (Baking soda helps minimize gas)
4. Rinse beans in cold water and put in crockpot and fill to near the top.
5. I turn on crockpot to high heat and add spices; salt, pepper, chili powder and onions. This week when I made them I didn't have onions so I used dried minced onions I always keep on hand.
6. A couple hours or so before done I add tomato sauce.
7. Estimated time six to eight hours. I never pay attention to the clock. The best ways to check when done is to taste the beans. With taste tests that is the best way to see if you need more spices.

To add more flavor I add four uncooked bacon slices. What is nice about homemade beans is you can add whatever you like.  It is up to what you like or your family likes.  I would add garlic powder, but my husband would rather me not. I also cook hamburger meat and add to the beans.
Beans great with crackers, my family loves Ritz or saltine crackers. Corn bread is great with beans too.  I usually grate cheese to add on top.
Tip: Look on the back of a package of beans for instructions. Google recipes. Look in recipe books.  Come up with your way to make what you like. Enjoy a homemade meal.

Gravy

I grew up with gravy for all different kinds of meat.
I assumed everyone knew about the gravy.
I met many people who have never heard of it.

All you need is meat cooked, flour and grease.
(If not enough grease add vegetable oil.)

Hamburger meat gravy...
Steak...
Pork Chops...
Sausage...
Bacon... (I had once at a campout at seventeen.)

Example.
1. Cook hamburger meat.
2. With grease in meat or added oil add flour and stir till brown.
3. Add milk and keep stirring until thick.

I don't have measured amounts. My guess I add a few tablespoons of flour and milk to make enough for the whole family. If too thick you can add more milk. You can add more flour if too htin, but the flour can become lumpy. If that happens smash the lumps with spoon.

If you have never made this kind of gravy and it doesn't turn out. Keep trying.  It tastes much better that any package gravy.  I love it on potatoes and my family puts it on thier meat as well.

Roast

Cooking a roast is too easy. Here's what I do.

1. I put small amount of oil on iron skillit and brown each side.
2. Then place roast in crockpot with water to cover the roast.
3. I add spices like pepper.
4. I dissolve two bouillon cubes in two cups of boiling water and add. You can add gravy mix as well instead of cubes. Or leave plain.
5.  Cook on high for several hours. Obviously it all depends on the size of your roast and size of crockpot.
~Without a crockpot cook on stove with lid.~

I add cut up potatoes and add a couple hours before dinnertime, if left in too long they can get too soft.  Most times I cook them seperate. Most people I  know cook carrots and other vegetables, but with my picky family I skip that.

The Best Butter Cream Frosting

1 ½ cup shortening
2 egg whites
½ tsp. salt
1 tsp. vanilla
1 tsp. flavor of choice
¼ cup water
Beat really well. Add 2 pounds powdered sugar. Add more if needed.

Sub Bread Pizza

1. Preheat oven to 400 degrees
2. Lay open sub bread. (I buy it in the bread isle)
3. Spread pizza sauce. (I use ragu pizza sauce or make my own using tomato sauce and italian spices and garlic powder)
4. Add whatever toppings you prefer and cheese
5. Bake for 5 or so minutes. (Use your judgement)

It is easy and fun. The bread is thick enough to not get soggy. Enjoy...

Everything Cookies...

1 C. butter or margarine
1 C. Brown sugar
1 C. sugar
2 T. vanilla
1 egg
1/2 C. oil
1 tsp. cream of tartar (or baking powder)
1 tsp. baking soda
3 C. flour
1 C. oatmeal
1 C. rice krispies
1 C. coconut
1 bag chocolate chips (or any kind of candy chip you want)
My mother adds nuts, but she does that to everything. They are apparently optional and I opt out.
Bake at 350 for 10-ish minutes

Oatmeal Peanut Butter Chocolate Chip Cookies...

CREAM TACO'S

1 pound hamburger meat
1 can cream of chicken soup
1 can cream of mushroom soup
1 can of evaporated milk
Opt. 1 can diced chili
1 pkg. corn tortilla's torn up.
1/2 cup shredded cheese.

Preheat oven at 350. Cook meat and drain grease.  In pan with meat add the cream of chicken and mushrooms, green chili if adding and evaporated milk. Cook until bubbly. Put the cooked ingredients in casserole dish or 9 x 13 baking pan and mix torn up corn tortilla's. Spread cheese on top. Bake until cheese is melted.

This is my brother, Roberts, favorite dish.

PEANUT BUTTER COOKIES

3/4 cup shortening
1/2 cup brown sugar
1/2 tsp. vanilla
1 1/2 flour
1/4 tsp. salt
1/2 cup sugar
1 egg
1/2 cup peanut butter
1 tsp. baking soda

Cream shortening with sugars, add egg, vanilla and peanut butter. Beat well. Add dry ingredients and blend well. Roll into balls and place on cookie sheet. Flatten with fork. Bake at 375 degrees.

JELLO-POP CORN BALLS

1 pkg. Jello (any flavor desired)
1 cup white corn syrup
1 cup sugar

Mix well and bring to boiling point slowly. Cook just until sugar is dissolved. Pour over 6 Quarts popped pop corn. Shape into balls with greased hands.

COCONUT-PECAN FROSTING

By my sister...Elaine Cannon. Very, very good with chocolate cake. Easy to make. Tastes its best the next day.

1 egg
2/3 cup evaporated milk
2/3 cup sugar
1/4 cup margarine or butter
1 1/3 cups flaked coconut
1/2 cup chopped pecans

Directions: In a saucepan beat egg slightly. Stir in milk, sugar and margarine. Cook and stir over medium heat about 12 minutes or till thickened and bubbly. Stir in coconut and pecans. Cool thoroughly. Spread on cake.

CHOCOLATE CAKE

8 oz. semi-sweet chocolate chips or baking chocolate.
3 cups flour
1 1/2 cups sugar
2 tsp. baking soda
1 tsp. salt
2 cups water
2/3 cup oil or applesauce. Applesauce is a lot less fat.
2 Tbs. vinegar
2 tsp. vanilla

Directions: Melt chocolate. Grease and flour cake pan. In large mixing bowl stir together flour, sugar, baking soda ans salt. Add melted chocolate, water, oil, vinegar and vanilla; beat on medium speed until thoroughly blended. pour into prepared pan. Bake in 350 degree oven for 50 minutes. Until toothpick inserted into center comes out clean.
